Gluten-Free and great flavor made with Chorizo and a bell pepper sauce that has fantastic flavors.

Instructions: This wonderful sauce is ready in the fridge along with fresh local eggs-12. Remove sauce from the fridge (one container per pan)-fill pans Warm on med heat (stove top) until just beginning to bubble. Make indentions in the sauce, and crack (6 per pan) eggs into the sauce. Cover with lids. Allow eggs to just set (3 - 5 min), then turn off burner heat. Allow sitting for 5 min to finish eggs. Top with mint and feta cheese.
